Ferran Adrià headlines Madrid gastronomy event

Catalan chef Ferran Adrià, who is renowned for his groundbreaking work in the world of gastronomy, will headline this year’s International Madrid Fusión Summit, a congress for professionals that opens on 28 January.

Adrià has regularly appeared at Madrid Fusión in the past, but returns this month following a seven-year absence.

He will talk about his latest venture that’s been described as ‘the return of el Bulli‘, his Catalan restaurant that was named the best in the world a record-breaking five times. Although the restaurant itself isn’t set to re-open (it now functions as a creativity centre), Adria has created el Bulli 1846, an innovation laboratory that’s due to be inaugurated this year.

Madrid Fusión is one of the most important global events for the gastronomy industry and welcomes speakers from both Spain and around the world.

Also taking part this year are leading Spanish chefs such as Elena Arzak, Albert Adria, Dabiz Muñoz and Elena Lucas, while the guest cities are San Francisco, Copenhagen and Budapest.

The programme includes workshops, talks about the use of artificial intelligence and big data in the food industry – a feature about reducing waste that showcases an app o sell uneaten breakfasts from the luxury Mandarin Oriental hotel – as well as discussions about the future of haute cuisine.
