Madrid celebrates its famous ‘cocido’ stew

The cocido madrileño is a classic dish from the Spanish capital, a stew made with a range of ingredients including chickpeas, short noodles, vegetables and meat, and from 14 February the city celebrates it with the ninth Ruta Cocido Madrileño.

Since its inauguration, new eateries have joined the ‘route’ each year and in 2019 there are 43 restaurants in both Madrid and the surrounding region taking part, offering the chance to try the popular winter warmer.

Organisers say that 200kg of chickpeas and 600kg of fideo noodles will be used to cook the 2,800 plates of cocido due to be served this year.

While the ingredients are cooked together, it’s usual for the stew to be served in three parts, starting with a soup, the chickpeas and vegetables (carrots, cabbage and potatoes), then the meat (chicken, jamón serrano, chorizo and morcilla).

As well as enjoying the iconic dish, customers can vote on the Ruta’s website for their favourite version.
